Crab stuffed zucchini with artichokes


My fridge is a small small being and to bring in the new, I must also get rid of the old. Despite its small stature, I tend to throw things away far too often. Must be the lure of eating out in Spain, where tapas and menus del día can be cheap and delicious.

For my first entry in this blog, I have decided to tell a lie, hoping to grab your attention perhaps with the je ne sais quoi of my ingredients I suppose. I wrote crab when I should have written Krab...just a tiny oversight. This dish is the result of a fridge full of protein from a protein rich diet I've been doing. Thought I had better make the most of it.
I cut a zucchini into four sections longways and then used my recently imported (in my suitcase from the USA) grapefruit spoon to scoop out the insides. I flaked 3 krab (surimi) sticks into a bowl with a big spoonful of Greek yogurt, black and cayenne pepper, a tiny bit chopped zucchini guts and about three diced artichoke hearts from a bottle and a dash or two of grated Parmesan cheese Mixed the whole thing together while steaming the empty zucchini rind boats on the stove top for about four minutes. I stuffed the zucchini with the Krab and stuck them in a pan in the oven for about 25 minutes on pretty hot - 375 F or approx. 200 C.

Yum. They were very lovely, tasty and I was highly proud of myself. Ate them watching an episode on TV from the first season of Grey's Anatomy. My do they look young. Hungry again a couple hours later. I ate one before I remembered to take the photo.
